
I love making healthy, delicious soups. Especially when it is pouring with rain outside and I am relaxing in my peaceful haven.
Tonight I made my favourite. Vegetable soup with brown rice and red lentils. So yummy!!!
I start off with a little organic cold pressed olive oil in the saucepan and then I add some sliced red onion and a few cloves of garlic, sliced finely. When they are lightly cooked I take the pan off the stove and stir in a pinch of turmeric. It makes it such a beautiful golden colour and turmeric is such an amazing ingredient. I then add some purified water, about two or three cups, a tablespoon of Braggs Liquid Aminos, a pinch of pink himalayan salt, give it all a stir, and return it to the stove to heat up. I add a quarter of a cup of washed brown rice and half a cup of washed red lentils. Then I add some chopped vegies. Tonight I added swede, carrot, broccoli, pumpkin and green beans. I then bring it to the boil and simmer for about one hour. I give it a stir every now and then. Top with some fresh parsley and serve. Enjoy!!!! This quantity makes a couple of good sized servings. You can play with the quantities to your requirements. You can also stir in a teaspoon of miso paste before serving if you like – I really love that.
